Fried Zucchini

Ingredients

  • 1 tablespoon avocado oil
  • 1 tablespoon butter
  • 1 medium yellow onion thinly sliced
  • 1 large or 2 small zucchini (or yellow summer squash) sliced into 1/2″ thick rounds
  • 1/2 teaspoon kosher salt or pink Himalayan salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon thyme
  • 1/4 cup freshly grated Parmesan cheese  – you may need more depending on how much zucchini you have in the pan.

Directions

  • put oil and butter into large cast iron skillet. When butter melts and pan is hot, add onions
  • When onions start becoming transparent, add a single layer of zucchini to pan. (I had to use two pans in order to keep a single layer)
  • sprinkle salt, pepper and thyme to zucchini
  • let cook 10 minutes
  • move onions to sides of pan so the zucchini is at the bottom of the pan to brown.
  • sprinkle with 1/2 parmesan cheese
  • flip to brown the other side and sprinkle with the rest of the parmesan cheese
  • Serve while hot! Yuuuuuuummmmm!!
