Street Tacos

We bought this seasoning packet at Kroger. We slow cooked the pork for 8 hours and it pulled apart with ease.

Pico

  • 4 large tomatoes finely chopped
  • 3/4 cup fresh cilantro, chopped
  • 1/3 large red onion, diced
  • 1/2 cup fresh squeezed lime juice
  • 1/3 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2  or 1 chopped fresh jalepeno (omit if you don’t like it hot)

Topping

  • 1 cup sour cream
  • 2 Tablespoons mayonnaise
  • 3/4 cup chopped fresh cilantro
  • 1 fresh lime squeezed
  • salt and pepper to taste

While the pork is cooking and is almost done, make the pico and topping. When the pork is done, use two forks to shred it. Pan try your tortillas in avocado oil to heat and brown a little (corn or flour street-taco-size tortillas) Layer cheese, pork, pico and topping in the center of your tortilla, fold in half, open wide and mow down!!
