Baked Shrimp Linguine Scampi

 

This is a quick, easy and delicious dinner that Kevin and I rely on every so often….you know…when you forget to thaw something out for dinner…..anyhoo…..here it is, enjoy!

Ingredients

  • 1 lb shrimp, thawed, rinsed, deveined and dried
  • 6 oz (3/4 cup)  butter melted
  • 3 cloves minced garlic
  • 1 teaspoon salt
  • 1 tablespoon pepper
  • 1 tablespoon chili pepper flakes
  • 1 tablespoon lemon juice
  • 1/2 cup white wine
  • 3 tablespoons parsley flakes
  • linguine noodles

Directions

  1. Boil water for linguine
  2. Pour melted butter into 9×13 dish
  3. Mix garlic, salt, pepper, chili flakes, lemon juice and wine into melted butter
  4. Place shrimp in single layer in melted butter mix
  5. Bake 400 degrees 10-13 minutes
  6. Boil linguine at same time according to the directions on the box
  7. Drain linguine when fully cooked.
  8. Remove shrimp from oven and sprinkle with parsley.

You can add the shrimp to the linguine but we don’t do that because we don’t eat a lot of pasta. We just take a little pasta and put on our plate then load it up with the buttery shrimp mixture :)
