Fried Zucchini
Fried Zucchini
Ingredients
- 1 tablespoon avocado oil
- 1 tablespoon butter
- 1 medium yellow onion thinly sliced
- 1 large or 2 small zucchini (or yellow summer squash) sliced into 1/2″ thick rounds
- 1/2 teaspoon kosher salt or pink Himalayan salt
- 1/4 teaspoon black pepper
- 1 teaspoon thyme
- 1/4 cup freshly grated Parmesan cheese – you may need more depending on how much zucchini you have in the pan.
Directions
- put oil and butter into large cast iron skillet. When butter melts and pan is hot, add onions
- When onions start becoming transparent, add a single layer of zucchini to pan. (I had to use two pans in order to keep a single layer)
- sprinkle salt, pepper and thyme to zucchini
- let cook 10 minutes
- move onions to sides of pan so the zucchini is at the bottom of the pan to brown.
- sprinkle with 1/2 parmesan cheese
- flip to brown the other side and sprinkle with the rest of the parmesan cheese
- Serve while hot! Yuuuuuuummmmm!!
