Lemon, Artichoke, Feta Chicken

Ingredients

  • 3-4 chicken thighs (bone in and skin on)
  • oil for cooking chicken (I use avocado oil)
  • 1 small onion
  • 1-14 oz jar artichoke hearts
  • 4-6 garlic cloves, minced
  • approx 15 cherry tomatoes cut in 1/2
  • 2 tablespoons capers
  • juice of one lemon
  • several fresh basil leaves cut 1/2
  • 1 oz feta cheese
  • corn starch
  • Directions

 

Directions

  1. Sprinkle chicken on both sides with favorite spices (I just used pepper)
  2. brown chicken on both sides
  3. remove chicken, add onion & garlic, saute until onion are tender.
  4. put chicken back in pan and add artichoke with juices, cherry tomatoes, capers and lemon juice
  5. cover, reduce heat and cook until chicken juices run clear (25-30 min)
  6. stir in basil leaves
  7. Remove chicken. Add feta and stir.
  8. In a small bowl, whisk together water and corn starch. stir into pan of hot liquid and stir until thickened.
  9. Serve with rice, quinoa or mashed potatoes
