Lemon, Artichoke, Feta Chicken
Ingredients
- 3-4 chicken thighs (bone in and skin on)
- oil for cooking chicken (I use avocado oil)
- 1 small onion
- 1-14 oz jar artichoke hearts
- 4-6 garlic cloves, minced
- approx 15 cherry tomatoes cut in 1/2
- 2 tablespoons capers
- juice of one lemon
- several fresh basil leaves cut 1/2
- 1 oz feta cheese
- corn starch

Directions
- Sprinkle chicken on both sides with favorite spices (I just used pepper)
- brown chicken on both sides
- remove chicken, add onion & garlic, saute until onion are tender.
- put chicken back in pan and add artichoke with juices, cherry tomatoes, capers and lemon juice
- cover, reduce heat and cook until chicken juices run clear (25-30 min)
- stir in basil leaves
- Remove chicken. Add feta and stir.
- In a small bowl, whisk together water and corn starch. stir into pan of hot liquid and stir until thickened.
- Serve with rice, quinoa or mashed potatoes
